Why Inclusions Matter

When done well, inclusions don’t distract from the chocolate — they highlight it.

A well-roasted nut can amplify the chocolate’s depth. A bright fruit can lift its natural acidity. A hint of spice can stretch the finish and make each bite linger. The key is balance.

These bars were chosen because the added ingredients feel intentional — not overwhelming, not sugary for the sake of it, and never there to hide poor-quality cacao.

What’s Included

You’ll explore four chocolate makers using cacao beans from three different regions. See how the different beans and style of chocolate making affects the taste.

Ritual 70% Juniper Lavender
This Utah-based craft chocolate maker took their "Mid Mountain Blend" chocolate and infused it with local lavender and juniper berries. It brings a beautiful and unique floral, foresty, citrusy flavor journey.

Kasama 70% Single Malt Whiskey
For this special batch of chocolate, they roasted their Costa Esmeraldas cacao beans, then cracked them into nibs and aged them in an oak cask with Odd Society Distillery’s Commodore single malt whisky for 4 weeks, turning the barrel twice a day. The nibs were then dried and stone ground to create a deliciously rich dark chocolate with oak and whisky notes.

Tri-Island 75% Bee Pollen
They use ethically sourced, single-origin cocoa beans from Grenada’s rich volcanic soil and combine it with local bee pollen, golden and granulated. It creates a delightful crunch and subtle floral notes.

Hapa M.B.P. 75% (Mango, Banana, Pineapple)
Sourced from organic farms in the Semuliki Forest of Uganda, this fine cacao creates a delicious dark chocolate bar with mango, banana, and pineapple inclusions for a bold, tropical flavor.

I source top-quality chocolate from around the world, many of which are limited release or difficult to find outside their home country. Please see individual packaging for ingredients and allergen information. (I've used Google translate, so double check the translation if you have ingredient concerns.)
